Cake Base

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 tea spoon kosher salt
  • 1 cup milk
  • 1/2 cup vegetable oil or melted coconut oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

 

Chocolate Frosting 

  • 3/4 cup unsalted butter – softened
  • 5 1/4 cup powdered sugar
  • 1/2 cup + 2 Tbsp. cocoa powder
  • 3/4 cup sweetened condensed milk
  • 1/2 cup milk
  • 1 tsp. vanilla extract
  • 3/4 tsp. salt

 

Directions

Step 1: Prepare the Pan and Oven

Preheat the oven to 350º F. Prepare two 9-inch cake pans by spraying with baking spray.

Step 2: Mix Dry Ingredients 

Add flour, sugar, cocoa, baking powder, baking soda, and salt to a large bowl or stand mixer. Whisk through to combine or, using your paddle attachment, stir through flour mixture until combined well.

Step 3: Whisk All Ingredients Together 

Add milk, vegetable oil, eggs, and vanilla to the flour mixture and mix together on medium speed until well combined. Reduce speed and carefully add boiling water to the cake batter until well combined.

Step 4: Bake the Cake

Pour the batter into the prepared pan and bake for 30-35 minutes, or until the center springs back when gently pressed. Cool on a cake rack.

Step 5: Make and Apply Frosting

Cream the butter until smooth and add the remaining frosting ingredients and beat on high until fluffy.
